Ingredients
1 medium apple, peeled and cubed
2 tsp (6g) monk fruit sweetener or sweetener of choice
½ tsp (1g) ground cinnamon
¼ tsp (1.25ml) vanilla extract
Topping
- 2 tbsp (20g) rolled oats
¼ cup (35g) Flourish Apple Cinnamon Protein Pancake Mix
1 ½ tbsp (22ml) light maple syrup
1 ½ tbsp (22g) coconut oil, softened
¼ tsp (1.25ml) vanilla extract
Instructions
1. Preheat the oven to 350°F and grease a ramekin.
2. Chop the apple into small cubes.
3. Add apple the greased ramekin and mix in monk fruit sweetener, cinnamon, and vanilla extract.
4. In another bowl, combine oats, Flourish Apple Cinnamon Protein Pancake Mix, maple syrup, coconut oil, and vanilla until a crumbly topping is formed.
5. Sprinkle this over the apples.
6. Cover with foil and bake for 20 minutes, then uncover and bake for another 20 minutes until the apples are soft.
7. Serve warm with your choice of toppings, like vanilla ice cream, peanut butter, or yogurt!
