Ingredients
- 1/2 cup (120g) pumpkin puree
- 1 ¼ cup (125g) Flourish Pumpkin Spice Protein Pancake Mix
- 1 tbsp (7g) coconut sugar or sweetener of choice
- 1/4 tsp (1g) baking soda
- 2 tbsp (30g) greek yogurt
- 1/2 tsp (2.5g) vanilla extract
Cinnamon Sugar Coating
- 2 tbsp (15g) coconut sugar
- 1 tsp (5g) ground cinnamon
- 2 tbsp coconut oil, melted or butter, melted
Instructions
1. In a large bowl, whisk together pumpkin puree, Flourish Pumpkin Spice Pancake Mix, coconut sugar, baking soda, Greek yogurt, and vanilla extract until a soft, sticky dough forms.
2. Lightly grease the air fryer basket.
3. Drop small portions of the dough into the basket, leaving space between them.
4. Air fry at 375°F for 5-7 minutes, until golden brown.
5. Meanwhile, mix coconut sugar and cinnamon in a shallow dish.
6. Dip the cooked bites in melted butter, then roll in the cinnamon-sugar mixture.
7. Serve warm and enjoy!
